Ingredients

For the Pumpkin Bars:
  • 4 Eggs
  • 1 + 2/3 Cups White Sugar
  • 1 Cup Vegetable Oil
  • 1 (16 Oz.) Can Pumpkin
  • 2 Cups All-Purpose Flour (substitute with King Arthur Gluten-Free Flour for a gluten-free version)
  • 2 Teaspoons Ground Cinnamon
  • 2 Teaspoons Baking Powder
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Kosher Salt
For the Cream Cheese Frosting:
  • 3 Oz. Cream Cheese, Softened
  • 2 Cups Confectioner's (Powdered) Sugar
  • 1/4 Cup Softened Butter
  • 1 Teaspoon Vanilla Extract
  • 1-2 Tablespoons Milk (adjust based on desired frosting thickness)
Additional:
  • Grease for 10 x 15 x 1-inch baking pan

Steps

Step 1: Preheat and Prepare
  • Preheat your oven to 350 degrees Fahrenheit.
  • Grease a 10 x 15 x 1-inch baking pan.
Step 2: Mix Wet Ingredients

In a large mixing bowl, beat together:

  • 4 eggs
  • 1 + 2/3 cups white sugar
